생두 단가 에상하기
직접 산지를 방문하거나 옥션으로 제시된 생두 금액을 보면 ‘왜 이리 저럼할까’라는 생각을 할 수 있습니다. 그러나 보이는 것이 다가 아닙니다. 커피체리가 한 잔의 커피가 되면서 수많은 사람의 손을 거치며 그에 따른 비용도 추가되기 때문이죠.
산지에서 출발하기까지

생두를 구매할 때 포함된 금액의 첫 번째는 바로 농부 혹은 조합 등 판매자가 제시하는 현지 구매 가격입니다. 아무것도 포함되지 않은 금액으로 다이렉트 트레이트에서 계약 전 제시되는 금액이 이에 해당합니다. 또한 무역 거래는 대부분 달러로 진행하니 거래 당일 기준 환율을 곱해야 합니다. 무게 단위가 파운드일 경우 1파운드는 0.454kg이므로 달러/파운드에 2.2를 곱하면 1kg당 달러 가격을 알 수 있습니다. 이 금액에 환율과 총구매량을 곱하면 기본 단가 금액을 알 수 있습니다.

여기에 어떤 방식으로 포장하고 배송하는지에 따라 추가 비용이 달라집니다. 대부분의 산지는 한국과 멀리 떨어져 있기 때문에 배송에 긴 시간이 소요됩니다. 따라서 안전하게 신선한 상태를 유지하며 운반되도록 신경을 써야 합니다. 예를 들어 생두 포장을 일반 마대로 선택하느냐 그레인프로 백으로 하느냐, 운송 방법을 배 혹은 비행기 중 어느 것으로 선택하느냐에 따라서 해상운임이 달라집니다. 운송 방법은 구매한 양이 얼마 되지 않을 때는 항공 배송도 가능하지만, 그렇지 않을 경우 대부분 조운을 선택할 수밖에 없습니다.

구매 계약 과정에서 추가되는 비용은 여기서 끝이 아닙니다. 거래량이 많으면 큰 돈이 오가야 하므로 사고를 미연에 방지하고자 생산자와 구매자가 합의로 L/CLetter of Credit를 선택할 수 있습니다. 이때는 은행 계좌를 개설해야 하기 때문에 이와 관련한 수수료가 발생합니다. 또한 거래량이 많거나 안전한 운송을 위해 컨테이너 단위로 옮겨야 할 때는 의무적으로 ‘적재보험’과 ‘화재보험’에 가입해야 합니다. 즉, 선적이 가입한 보험 상품, 적재량 등에 따라 지불해야 할 보험료도 달라집니다.

※ 국제 무역 거래 관련 용어

EXWEx Works(공장인도조건)
수출업자가 현지 농장에서 수입업자에게 바로 제품을 인도하는 것. 수입업자에게 물품이 인도될 때까지 수출업자가 책임지는 것을 말합니다. 단, 수입업자는 수출입허가 등 수출 관련 서류, 통관 비용, 보험료 등을 부담해야 합니다. 상대적으로 수출업자에게 부담이 높은 거래 방식입니다.

FOBFree on Board(수출항 본선인도조건)
수출업자가 선적항까지 제품을 인도하는 것. 포장비, 선적항까지의 운송료, 창고료 등을 부담한다는 내용이 들어갑니다. 제품 출항 전 생기는 문제에 대해서는 수출업자가, 출항 후 발생 문제는 수입업자가 책임지게 됩니다.

CIFCost, Insurance and Freight(해상 운임⋅보험료 포함 조건)
수출업자가 수입업자 국가 선적항까지 내륙운송비, 수출 통관비, 해상운임 및 보험료까지 부담합니다. 수출 관련 서류 또한 수출업자가 준비해야 합니다.

수입 통관 과정에서

해상운임, 보험료 다음으로는 선적항에 도착하고 나서 발생하는 비용이 추가됩니다. 세관에서 징수하는 관세 2%1), 부가가치세 10%2) 외에도 업체에서 요구하는 기타 비용이 있습니다. 입항 과정에서는 해상 운임 외 화물입항료, 하역 중에는 하역료, 검수료 등을 지불해야 합니다. 보관⋅통관에는 보관료, 입⋅출고료와 하⋅상차료, 검사료, 검역신청수수료, 검역수수료 등이 붙고 관세사를 통하여 처리할 경우는 관세사대행수수료도 추가됩니다. 물론 시내/외 운송료도 지불해야 합니다. 검역 비용은 일반 검역, 정밀 검역에 따라 내용과 검역 기간, 비용이 달라집니다. 일반 검역은 간단한 관능검사로 약 일주일이 소요되며 한 항목당 10~20만 원 정도의 비용이 듭니다. 정밀 검역은 최초 수입물량이 100kg 이상일 때 식품유해성분 검사를 받는 것으로 공휴일 제외 열흘 정도 소요되며 약 100만 원 정도의 검역비가 필요합니다.

정밀 검역을 제외하고 운송, 관세 등 그 외 비용은 환율 적용 전 총 물품가의 20%로 예상하고 계산하면 우리는 현지 구매 가격 정보만으로도 생두 단가를 얼추 계산할 수 있게 됩니다. 만약 다이렉트 트레이드가 아닌 업체를 통해 생두를 들여오는 경우라면 기업 운영을 위한 이윤 비율 즉, 기업 마진율에 따라 추가 비용이 발생합니다. 옥션에서의 낙찰가, 산지에서의 판매가를 보고 하나씩 적용해본다면 카페에 맞는 생두를 구매할 때 큰 도움이 될 것입니다.

1) 콜롬비아, 인도, 베트남 등 우리나라와 FTA를 체결한 나라와 거래하면 관세가 절감됩니다. 생두는 2%, 원두는 8%의 관세가 붙는다.
2) 미가공 생두 구매는 추가 가공 없이 재판매할 경우에는 ‘의제매입세액공제’를 받을 수 있지만, 가공을 하면 혜택을 받을 수 없다.
